It’s not quite a pancake, but this Sweet Souffle Omelette a pretty good alternative!

This fluffy omelette is perfect for breakfast or brunch and can be served with your choice of fruit – we love it with strawberries, but you could try raspberries or even apricots!

If you can, make it when fresh berries are in season – but you could always substitute them with frozen fruits if fresh ones are unavailable. At just 1 Weight Watchers Point, it’s a light treat, and not only that – it only takes 10 minutes to make.

This is a delightful sweet recipe and one of our favourites!

We use Sukrin 1 which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over on Amazon UK.

That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How many Calories are in this Sweet Souffle Omelette?

Separate the egg into 2 separate bowls.

Clean and dry the whisk, then whisk the whites until they form a stiff peak.

Gently mix the yolks into the whites making sure it’s mixed evenly.

Step 5

Add the mix into a hot frying pan that has been spayed with low calorie cooking spray.

Step 6

Allow to cook for approximately 3-4 minutes, or until the bottom is golden brown.

Step 7

Place the pan under a hot grill for another few minutes, until the omelette is set and golden.

Step 8

Mix the yoghurt with the other half of the sweetener and the vanilla extract.

Step 9

Turn out on to a plate and fill with your chosen fruit. Then spoon over the yoghurt mix to serve.
