Scones in the United States are more dessert-like, with a crust of sugar on top or a drizzle of glaze, and are generally triangular in form. However, they're largely the same thing.

It's a delightfully soft and flaky baked item made without yeast and instead leavened with baking soda or baking powder.

They're comparable to what we call a biscuit in the United States however, scones are often denser and less rich.

If you’ve always thought scones are dry, that’s absolutely not true. With the right recipe, you can make scones that are absolutely delicious and the recipe I’m sharing with you today will give you exactly that!

Can I Use Frozen Blueberries to Make These Scones?

This recipe calls for fresh blueberries, but you can definitely use frozen ones instead as well. Just make sure to thaw them, wash them, and then pat them dry using a kitchen towel or paper towel before using in this recipe.

Why Use Cold Butter to Make Scones?

The key to making good scones is cold, frozen butter. The cold butter covers the flour, resulting in atonof flour-coated butter crumbs.

When these crumbs melt while the scones bake, steam is released, giving the scones their flakiness. The crust becomes crumbly, crispy, and crisp on the outside.

Refrigerated butter may melt while you work with it, but frozen butter will keep its shape until it's time to bake.

The finer the cold butter bits, the less the scones spread and the faster the butter incorporates into the dry ingredients giving you the perfect scones ever.

For the Scones

  • All-purpose flour: Using all-purpose flour for the scones will give you a tender crumb which will give these delicious treats a crumbly texture, exactly the way they should be!
  • Baking powder: We’ll be using baking powder as one of the leaving agents in our scones to help them rise properly.
  • Baking soda: This will be the other leavening agent we’ll use in conjunction with baking powder for the perfect scones.
  • Sea salt: A little salt will help bring out the flavor in the scones and balance everything out.
  • Unsalted butter: We’ll be using cold, frozen butter for this recipe. Using cold butter will make sure you get light, tender, and flaky scones that are absolutely perfect.

Eggs: Using eggs in the recipe will make sure your scones aren’t dry since eggs add moisture to the scones without the use of heavy cream. You’ll need two large eggs at room temperature for this recipe.
Sugar: We’ll be using some granulated sugar to lightly sweeten our delicious scones to perfection.
Lemon juice: Fresh lemon juice is what we need for this recipe for the perfect flavor. I don’t recommend using store-bought bottled lemon juice for this recipe as you won’t get the right level of tartness and beautiful flavor that freshly squeeze lemon juice will give you.
Lemon zest: Using lemon zest will give you an incredibly delicious lemon flavor that’s natural, and tastes just right.
Vanilla extract: We’ll be using some vanilla extract to take these scones to the next level with a subtle flavor of vanilla.
Blueberries: Blueberries with lemon is seriously the perfect flavor combination. I’ve used fresh blueberries for this recipe but you can use frozen ones instead. Just make sure to thaw them properly, wash them, and then pat them dry before using them in the recipe.

For the Glaze:

  • Confectioners’ sugar: The glaze perfectly complements scones and we’ll be using some confectioners’ or powdered sugar to make it.
  • Lemon juice: We’ll need some lemon juice for the glaze as well and I definitely recommend using freshly squeezed lemon juice for this as well.

Making these delicious Lemon Blueberry Scones is incredibly easy and you’ll only need 15 minutes to prep them! Here’s how to make them step by step:

Start by preheating the oven to 350 F (180 C).

Next, combine the dry ingredients in a large bowl. Whisk together flour, baking powder, baking soda, and salt until well combined.

Now add pieces of cold butter to the mixture and cut into the dough using a pastry cutter until the texture turns crumby. Cover the bowl with a lid and place it in the fridge so the butter doesn’t melt or soften.

Next, zest the yellow part of the lemon skin (the outside of the lemon) using a zester. Set aside until ready for use.

Beat eggs into a medium bowl, then add the sugar and beat on high using a hand mixer until foamy and light in color.

Add freshly squeezed lemon juice, lemon zest, and vanilla extract. Beat once more for 15 seconds or until all combined.

Now pour the egg mixture into the flour mixture. Then add fresh blueberries and using a silicone spatula fold everything together until combined. Make sure to not overmix the dough though.

Transfer crumby scone mixture onto lightly floured work surface.

Split the dough into two portions and gently press and roll the dough together using your hands. Sprinkle a little flour if needed when working it into a ball. Be careful not to overwork the dough.

Press each ball into a disk using your hands and then cut into equal size wedges using a dough cutter, knife, or bench scraper.

How to Bake Lemon Blueberry Scones

Carefully transfer uncooked scones onto a 15 X 21 baking pan lined with parchment paper.

Bake scones in the preheated oven at 350 F (180 C) for 25 minutes. Remove from the oven and cool to warm before glazing.

How to Glaze Scones

Time to make the glaze! Start by combining together confectioners’ sugar and freshly squeezed lemon juice. Stir well until smooth.

Transfer the glaze into a sandwich bag, cut the tip off the bag and drizzle warm scones.

How to Store Lemon Blueberry Scones

These delicious Lemon Blueberry Scones will last at room temperature for a day. After that, I recommend storing them in an airtight container in the fridge for up to 3 days.

Can You Freeze Lemon Blueberry Scones?

Yes, you absolutely can. In fact, you can freeze these scones before or after baking.

If you want to freeze the scones dough, you can till you’re ready to bake it. Simply follow all the steps and then cut the scones into the desired shapes. Once that’s done, place them in freezer bags and put them into the freezer until they’re frozen hard.

When you’re ready to bake them, bring them to room temperature before baking and bake according to the instructions I’ve mentioned in my recipe. You can freeze scones dough like this for up to three weeks in the freezer.

This is a great way to freeze them if you want that fresh, out-of-the-oven flavor every time!

Another way to freeze them is after they’re done baking. After they have cooled, place them in a resealable plastic bag or an airtight container.

Defrost at room temperature before serving. To reheat, you can microwave or place them in the oven for 5 minutes at 350 F (180 C). Just make sure to not bake them for too long as this can dry them out. Allow them to cool before icing them with the lemon glaze.

If you’re freezing them this way, they can last up to 2 months.

Can I Make These Ahead of Time?
